Litsa, this may help with the colours that your students are looking. 

In GanttProject, make each task any colour by double-clicking the task to select it, then “Choose” from “Colors”. For details: https://help.ganttproject.biz/t/colour-coding-tasks-based-on-roles/3354

I can imagine why some would like to ‘brighten’ up their plan :-)
