Adobe has a whole section of video tutorials for all their software.

They also have teacher resources and other resources available either
for free or to purchase on the website, which are pretty much whole
courses out of the box.

I would also suggest the mediacollege website, which has good examples
of shot types, tutorials on sound recording (could also be used for the
audio elective unit in Units 1-2), and interview techniques.

for composition, reminding students about getting interesting shots)

and layers magazine, which has tutes on most Adobe software (many by
Scott Kelby who is one of the leading Photoshop gurus)

Anything under the Lynda series also tends to be pretty good for Adobe
stuff, however you generally have to purchase: http://www.lynda.com. The
books are good, and sometimes some of the training videos can be picked
up on discs with various magazines.

As for books, there's the Adobe Premiere Pro Classroom in a Book, which
is good for premiere, or for video, the Martha Mollison/AFTRS 'Video
Production: A Complete Guide" is good for video production techniques.
The Katz books like 'Directing Shot by Shot' are also good for examples
of storyboarding and shot types, and breaking scenes down visually.
